Customer Review: The most useful pan I own

Of all the pans in my kitchen, this is the one I use the most. This pan is pretty heavy and is extremely durable, and nothing sticks to the surface, even crusted items that have been burned on the bottom of the pan. They didn't skimp with the handle like on some other pans -- its thickness makes it easy to lift a heavy load of food, and it seems like it can take a lot of abuse. Overall, I think the closest competitor to this pan is the stir-fry pan from Analon, but after holding both in my hands at the store, I chose this one due to the handle and the seemingly-better non stick surface.This appears to be the exact pan that Martin Yan always uses on his PBS show ("Chinatowns") -- he almost never uses a wok, and when he does, it's the Circulon 2 wok (which I don't have, because who needs it with this 12" stir fry pan). Granted, I'm sure that Circulon sponsors his show, but it's still a good pan.
This pan is most useful as a wok replacement. Because it doesn't have a flat bottom, I can't use it for everything (e.g. omletts), but I also frequently use it in non-wok situations such as pasta sauces. At 12" it can fit a surprising amount of stir-fry, enough for 4-6 people if it's filled to the brim, but occasionally I do wish Circulon made a bigger stir-fry pan besides their wok. I also wish it came with a lid, but I own a 12" lid from another pan, so I don't need one.
After owning this pan for a year, I am so impressed with Circulon that now I always search for pans in the Circulon 2 lineup before considering anything else.

The patented TOTAL Hi-Low Food Release system protects the nonstick surface from abrasion, allows food to slide out easily, and, along with the nonstick exterior, makes clean up a breeze. ...Coated inside and out with rugged nonstick, Circulon 2 cookware eliminates the chore of scrubbing pots and pans. Inside their bottoms, Circulon's patented Hi-Low system of concentric grooves creates narrow ridges to take utensil abuse, leaving low, wide grooves unscathed to readily release food and ensuring long life for the nonstick coating. Beneath the nonstick is harder-than-steel anodized aluminum. Pot and pan bottoms are left uncoated to conduct heat quickly and prevent hot spots. The Hi-Low concentric grooves climb all the way up the rounded sides of this 12-inch stir-fry pan (which doesn't have a lid), permitting thorough stirring and scraping without damaging the nonstick coating. It's 3 inches deep, providing room for lots of vegetables or Asian preparations. Wide at the top and narrow at the bottom, it can be used to deep-fry food with less oil than a straight-sided pan.
